Giancarlo got his first small part on Broadway in 1968 when he was only 8. His first recognizable role was Julian in School Daze movie (1988). In 2008, Esposito's first directed movie, Gospel Hill, appeared on the screen.

Giancarlo is known by a wide audience for his role of Gustavo Fring, a methamphetamine distributor he played in Breaking Bad series (2009–2011 ) and its spin-off Better Call Saul (since 2017).
